Industrial viennoiserie arrives frozen, gets defrosted, and tastes the same everywhere. Ours starts before dawn in the kitchen at 21 Rue du Marché: dough laminated by hand, folded, rested, folded again — then baked in small batches the same morning. You can see it in the layers and hear it in the crust.
The pistachio croissant — house pistachio cream on golden lamination — has become the signature of the house. Around it: classic croissants, pains au chocolat, and the day's bake, chef's mood. It all goes fast. The regulars know.
